Cejos are blocks of limestone that jut out of ravines like lumps of cake and which have been frequently been used to protect farmhouses and whole neighbourhoods. Sheltering under one of these cejos are the hotel’s three adjoining houses each with its own living room, and housing a combined total of 13 bedrooms, 2 of which are located in the windmill, where the river rumbling along the ravine bed can be heard from the doorway. The traditional style and materials associated with
